Clean the mutton chops and marinate them with the ingredients for marination and keep aside for about 30-40 minutes.
In the mean time, clean the potatoes and cut them to thin strips. Put them into clean water with salt and keep aside for some time. After 40 mins, cook the marinated mutton in a pressure cooker till mutton is very soft. I cooked for about 8-11 whistles.
Once cooked, and the pressure completely released, separate the stock and keep aside. Slightly crush the soft mutton pieces with your fingers. On to a hot pan, add some oil. To this add the ginger and garlic and saute till it begins to brown.
Then add the onions and saute till soft and tender. Make a paste with the coriander powder, meat masala powder, kashmiri chilly powder, soya sauce and Worcestershire sauce. If required, just add a drop of water.
When the onions are soft and tender, add this paste mix and mix well. When the raw smell fades, add in the stock and a pinch of salt and let it simmer. Once the gravy/ sauce starts to get reduced add in the mutton pieces along with the leaves keeping aside a little for garnish.
Mix well and when the gravy coats the mutton pieces, take off from flame.
For the french Fries – In a deep bottom pan, add oil for deep frying. When oil is very hot, fry the potatoes that were being in the salted water. This helps in the getting the potatoes crispy.
