  3. Prepare 1 clove Garlic clove, chopped
  4. Take 1 can Rotel tomatoes
  5. Make ready 1 lb Smoked Sausage,cut into 1 inch pieces
  6. Take 1 lb Medium Shrimp, cleaned
  7. Get 1 tsp Fresh Rosemary,chopped
  8. Make ready 1 bay leaf
  9. Make ready 2 1/2 cup chicken broth or stock

  1. In skillet heat 2 Tbsp oil medium heat, add chopped onion and saute till tender then add sausage and brown for just a minute or two.
  2. Pour in can of rotel, garlic, rosemary, bay leaf, chicken broth and box of jambalaya mix. Stir and bring to a boil. Reduce heat to low and simmer for 20 minutes.
  3. Add in peeled & cleaned shrimp and stir. Cover and simmer 5-10 minutes till shrimp are cooked.
