  1. Heat up the oil or butter and add the onions and chicken thighs cut into bite size pieces and colour the chicken all over.and fry on medium heat until all the chicken is coloured.
  2. Whisk the curry paste in a little cold water.
  3. Pour in the boiling water then add the chicken stock to the boiling water stir to mix. Then add the curry paste in water. Mix well.

  5. Make the rice ready. Basmatti Rice. Boil with a little salt.
  6. Add the rice to the serving plate and then add the Curried chicken
  7. Next add the sultanas, Apple, and the Mango chutney and stir turn down the heat and simmer for 20 minutes. Stirring occasionally.
  8. Afterthe 20 minutes it will be a lot thicker if you want it thicker just add 1 more tbls curry paste and mix again with a little water and add it to the curry bring to the boil and then simmer for 5 minutes.add on top of the rice and enjoy.
