  1. Have all the ingredients ready as its quick at the start. Add the oil to a pan frying pan or saucepan heat up. Add the onions stir around then add the garlic.
  2. Next turn the heat down to medium and let onions cook for 2 minutes. Add all the dry spices one after the other then add the 4 tbls water and the pasatta also the curry leaf. Stir.
  3. Keep stirring around for 2 minutes as it starts getting thick add the extra water boiling.
  4. Next add the yogurt stir in then more boiling water if too thick. Add the corriander leaves and stir in simmer for 5 minutes.
  5. Slice you boiled eggs in half and add them on a small bed spinach. Then pour the sauce over them and leave to marinate for 1 hour. Warm up in the microwave when ready to serve.
