Make ready 300 gms Red baby carrots
Take 1 medium potatoes diced
Prepare 1 1/2 cups Rice
Prepare 1 Onions sliced
Take 2 green chillies
Get 1 each of whole spices
Take 1 each (cardamom, cinnamon sticks, cloves)
Prepare 3 Black pepper
Get 2 bay leaves
Prepare 1 star ainse
Prepare 1/2 tsp Homemade garam masala
Take 1 fist full of Cashew Nuts
Get 3 tbsps Ghee
Get 3 cups water
Make ready to taste Salt
Prepare 1/4 Lemon
Steps to make Carrot rice:
Wash, peel and grate all carrots. Keep aside.
Add ghee to a deep sauce pan. Add whole spices. Add cashews.As it splutters add the chopped onions. Saute well.
Soak the rice for 15 minutes.
Add green chillies and ginger garlic paste. Saute till raw smell goes away.
Add potatoes and saute.
Now add the carrot and saute for few minutes with some salt and the spices.
Add washed rice and water. Check for seasoning. Squeeze the lemon.
Wait for a rolling boil. Cover and Simmer on low heat for 20 minutes.
Open and fluff the rice.
Serve as you desire.
