Prepare 1/2 cup sesame seed or refined oil

Steps to make Peanut Garlic Chilli Potato:
Peel and slice potatoes into fingers.Steam in microwave or parboil in 1 cup water with little salt.Drain excess water.Smear cornflour,pinch of salt and little red chilli powder in potatoes.Heat oil and fry the potatoes in low flame so that potatoes are properly cooked.Remove excess oil.
In 1 tbsp oil, sprinkle minced garlic and fry till golden brown.Add sliced onion, sliced capsicum,chopped green chillies.Stir fry.Add roasted peanuts and sesame seeds.Toss all and add the fried potatoes.
Mix all sauce,ajinomoto,vinegar and orange red food colour in remaining cornflour.If needed add 1 tbsp water in the slurry and mix in the potatoes.Toss till dry and garnish with chopped coriander.Serve hot crispy fried Peanut Garlic Chilli Potato as an appetizer, or as a snack with tea or in breakfast with bread or as a side dish with noodles.
