  9. Prepare 1 pinch chili flakes
  10. Prepare 1 clove crushed garlic
  11. Prepare Salt and pepper to season
  12. Prepare 1 tspn olive oil
  13. Prepare For the chipotle mayo:
  14. Prepare 1/2 tsp chipotle paste
  15. Prepare 1 tbsp mayonnaise
Steps to make Chipotle & Bean Burrito Bowl 🌯:
  1. Wash, chop and dry the lettuce. Leave to one side.
  2. Make the chipotle mayo by combining the mayonnaise and chipotle paste. Leave to one side.
  3. Prepare the avocado. Add to a bowl with oil, salt, pepper, garlic and chili flakes. Use the back of a fork to smash together. Leave to one side.
  4. Microwave the rice per instructions.
  5. Microwave the sweetcorn. (1-2mins)
  6. Heat the beans. (Or have cold if you prefer). Make sure to use ones pre-soaked. I used my slow-cooker chili recipe (please see my other recipes for how to make).
  7. Start layering the different components. Start with rice, then add the rest. Cover the lettuce with the chipotle mayonnaise.
  8. Top with cheese and jalapeño peppers. Enjoy!
