Instructions to make Maiale con Rotini:
  1. Crisp the prosciutto and set aside. Then in same pan crisp the bacon.
  2. While the bacon crisp start the pasta water boiling and add the pasta. Slice the tomatoes in half. Set the bacon aside. When cool enough slice the prosciutto and bacon into good sized pieces.
  3. To the drippings add the butter, tomatoes, and capers. When the tomatoes are sautéd for 7 minutes or the butter melts, add 1/2 cup of the pasta water. Deglaze the pan.
  4. When the pasta has cooked 10 minutes add to the tomatoes. Stir in coating all the pasta. The add the prosciutto, 1 cup pasta water, and bacon. Stir well.
  5. Add the cup of grated Parmesan cheese and stir in. Let the cheesiness coat everything. Now shred the Parmesan cheese add over the top and serve immediately. I hope you enjoy!!!
