Take 1 carrot (peeled and finely diced)
Get 2 celery stalks (finely diced)
Prepare 1 medium onion (peeled and finely diced)

Prepare 227 grams sausage meat
Get 85 grams prosciutto (finely chopped)
Take 85 grams pancetta (finely diced)
Get 118 ml dry red wine
Prepare 3/4 kg chopped tomatos
Take 3 tbsp olive oil
Prepare 500 grams passata (pureed tomatos)
Make ready 1 tbsp dried oregano
Take 20 grams chopped fresh parsley
Make ready 8 grams chopped fresh basil
Make ready Salt
Take Pepper
Prepare 1 dash Red pepper flakes (optional)
Steps to make Delicious Ragu Sauce:
Heat the oil in a large heavy saucepan over medium heat and cook the celery, carrot and onion until tender, about 6 minutes maximum.
Add the ground pork, sausage meat, pancetta and chopped prosciutto and cook until the meat is no longer pink and has begun to brown. This will take about 8 to 10 minutes.
Add the garlic and cook an additional couple of minutes until fragrant :)
Next add the wine and cook until it has almost completed evaporated.
Stir in the tomatos, passata, oregano, parsley, basil, salt and pepper (and red pepper flakes if using) and bring to a boil.
Reduce the heat to a simmer and continue to cook for an hour and a half until the sauce has thickened, adding a little water if sauce is too thick.
Taste, and adjust seasonings if needed.
Serve on a pasta of your choice
