  1. /Wash and completely dry the bhindi / okra (wipe with a cotton kitchen cloth to ensure there is no moisture remaining)
  2. Cut the top of the okra and slit it lengthwise / vertically keeping the shape intact (do not cut it into 2 pieces just make a deep incision to fill the stuffing)
  3. Roast the fennel and cumin seeds and roughly ground them.
  4. In a bowl add the turmeric, cumin powder, fennel powder, red chili powder, coriander powder, amchoor powder and mix well. Check the taste for seasoning.
  5. Fill this stuffing in the okra evenly.
  6. Take a heavy bottom pan or a non-stick pan, add 2-3 tbsp spoon of oil, once the oil is hot add a pinch of asafoetida, then add okra/ bhindi and shallow fry on all the sides till it cooks. Stir occasionally in between to ensure all sides are cooked.
  7. Serve hot with phulka’s or roti.
