4. Make your white sauce. In a pot, melt some butter, add some flour, salt, pepper, mixed herbs, and milk. You can stir this mixture, with a whisk, if you'd like, so sauce is not lumpy, I however, only stir it every few seconds, I cook it on a high heat. Once the sauce is the consistency you'd like, add some grated mozzarella cheese. Some people like thick sauce, others runny - so it varies.
