  2. Prepare white onion halved & thin sliced

  9. Prepare Cayenne pepper

Steps to make Cheesy Squash Casserole:
  1. Thinly slice the 2 lbs of squash
  2. Cook the squash and onions in a small amount lightly salted boiling water for 10 to 12 minutes or until veggies are tender.
  3. Drain and set aside.
  4. Preheat oven to 350°F
  5. Melt butter in a medium saucepan over medium heat. Once butter is melted, add flour. Stir occasionally for 1 minute.
  6. Warm milk for about 1 minute in microwave. Gradually add warmed milk to butter/flour mixture. Stir constantly, until mixture is thickened and bubbly.
  7. Remove mixture from heat.
  8. Add 1 1/2 cups cheese, salt, pepper, and cayenne. Stir until cheese melts completely.
  9. Add squash. Stir well.
  10. Spoon squash mixture into a shallow baking dish lightly coated with cooking spray.
  11. In a small bowl gently crush ritz crackers and combine with additional 1/2 cup of cheese.
  12. Evenly coat squash with cracker mixture.
  13. Bake at 350°F for 20 - 25 minutes or until cheese is melted.
